Knives Out

Meet one of our new partners on the Mission 18th Street Tour. Please welcome Bernal Cutlery, a knife emporium like no other, co-owned by Josh Donald and Kelly Kozak, the couple behind this beloved knife sharpening business.

From modest beginnings to a thriving brick-and-mortar business with a team of employees, the pair have created a community around knives embraced by novice cooks and top chefs alike.

As its name suggests, Bernal Cutlery got its start in the Bernal Heights neighborhood of San Francisco. Life and work partners Donald and Kozak opened their first storefront location in 2010, after five years of working from a utility room in an apartment. The self-taught knife sharpening duo outgrew both the Cortland Avenue locations and moved to bigger digs in the Mission District in 2019.

The store is known for its knife sharpening services, Japanese and Western culinary knives, vintage knives, outdoor, pocket and craft knives, cooking tools and accessories, knife skills, sharpening classes and cookbook collection. During the pandemic, it curated a pantry that boasts an impressive wall of tinned fish, among other specialty items. The owners have crafted a culinary environment that appeals to kitchen professionals, knife enthusiasts and home cooks. Stop by and you may just find your favorite chef perusing the knife displays.

Not bad for an idea cooked up to help two new and broke parents pay the bills and keep food on the table. The business has grown to include a crew with unique and quirky experiences and interests. And it attracts a loyal following.

In 2018, with an assist from writer Molly Gore and photographer Molly DeCoudreaux, Donald published Sharp: The Definitive Introduction to Knives, Sharpening, and Cutting Techniques with Recipes from Great Chefs. A knife skills class in book form, Sharp also offers an introduction to the history and back stories behind the best knives money can buy from all over the world. The comprehensive guide also details key elements to caring for quality knives, including sharpening and knife skills. And it includes a bunch of recipes from celebrated local chefs—including Stuart Brioza of State Bird Provisions and Melissa Perello of Frances.

Back in September, Bernal Cutlery’s Tim Ferron walked guides through the spacious store, explained its history, and answered our questions about culinary knives and what it’s like being part of the Mission District’s small business food community.
